Daddy's Christmas Breakfast




Chris made the yummiest *Peanut Butter Pancakes* for breakfast on Christmas morning. Here's the recipe:





Ingredients

  • 2 cups all-purpose flour
  • 2 Tbsp. sugar
  • 1 Tbsp. baking powder
  • 1/4 tsp. salt
  • 2 eggs, lightly beaten
  • 3/4 cup creamy peanut butter
  • 2 cups milk
  • 1/3 cup peanuts, finely chopped

Directions

1. In a large mixing bowl combine flour and other dry ingredients. In a medium bowl whisk together eggs and peanut butter until combined. Gradually stir in milk (mixture will be stiff at first but will thin when all the milk is added). Add peanut butter mixture to flour mixture. Stir just until combined but still slightly lumpy. Gently stir in peanuts. Batter will be thin but will thicken slightly after standing a few minutes.

2. Heat a lightly greased griddle or heavy skillet over medium heat. For each pancake, pour about 1�4 cup batter onto griddle.

3. Cook over medium heat until pancakes are golden; turn when tops are bubbly and edges are slightly dry (1 to 2 minutes per side). Makes 16 pancakes.

Kim,

We have been having late breakfast lately due to the kids having a school break...so I printed off your recipe and made them this morning! All I can say is...we loved them!!! I did add a touch to the bigger kids panckaes...a handful of mini chocolate chips....so we had yummy warm reeses cups for breakfast!Oh,and I used crunchy peanut butter and creamy peanut butter mixed together--it worked well,too. I'm hanging on to this recipe...we all gobbled them up. Thanks so much!!!!

I'm so glad you loved them! I thought they were scrumptious, but then again, I love peanut butter and syrup together. Chris did not use the peanuts because he thought the kids would object, but crunchy peanut butter sounds great! He actually mentioned the chocolate chips, after the fact so we will have to try that next time :)

I love the late mornings. I still have kids wearing pj's!
